Lemon Potato Wedges

You know when you have zip for groceries, and yet the family still expects something to grace their plates at dinner time?

My dilemma exactly. So I came up with this! It got rave reviews, and there wasn’t a wedge left. I think it’s a keeper!

Lemon Potato Wedges

6 medium potatoes, scrubbed, cut into wedges, and patted dry

1 fresh lemon, sliced

1/2 cup mayonnaise (or salad type dressing mayonnaise)

Italian style bread crumbs

salt and pepper to taste

Put your wedged and dried potatoes into a large bowl. Add the mayonnaise, and stir to combine.

Squeeze about 4 of the lemon slices over the potatoes. (Keep them, you will be using them in just a minute)

Add salt and pepper to taste. (I think I used about 1/4 teaspoon, but it could have used a teenie bit more.)

Sprinkle bread crumbs over the potato mixture, and stir well to get everyone in the bowl covered.

Grease a cookie sheet with about a tablespoon of oil, then lay the lemon slices down.

Place the potato wedges in the pan and over the lemons. (only a few will actually be on the lemons)

Sprinkle more bread crumbs over the potatoes.

Lemon Potatoes Before Cooking

Bake in a preheated oven at 350 degrees farenheit for about 60 minutes, turning once,  till golden, and potatoes pierce easily with a fork.

Ding! Time to impress your family with a new potato favorite.
