I love love love summer, because that means cucumbers! How many out there are growing cucumbers this year? I have one plant, and that usually means more cucumbers than I can eat..but I sure give it a good try. Hence a quick recipe to use up those soon to be abundant fresh crisp cukes.

1 cucumber, peeled if desired, and cut into slices

1 walla walla onion, cut into chunks

1/4 cup salad dressing type mayo

1/4 cup ranch dressing

1/4 cup lemon juice (bottled is fine)

1 tablespoon sugar

black pepper to taste

Put cucumber slices and onion chunks in a medium sized bowl. Cover with ice water and 1/4 teaspoon of salt. Let soak for 30 minutes; drain well.

Meanwhile mix together the salad dressing mayo, ranch dressing, lemon juice, sugar and black pepper.

Put drained cucumbers and onions in a bowl, pour dressing over, and mix well.

Chill for one hour in the fridge, and serve.

YUM
