Spiral Pasta Salad with Marjoram Vinaigrette

A little sweet, a little tart. What’s not to like?

Originally from a “Taste of Home” Magazine. The vinaigrette part anyways. You know how I like to shake things up a bit.

Pasta Salad

Spiral Pasta Salad

1 pound bag spiral pasta

3 roma tomatoes, deseeded and chopped

1 green pepper, chopped

1/4 cup onion, chopped

1 green onion, sliced thinly

3/4 cup black olives, sliced

1 stalk celery, chopped

1/2 medium orange pepper, chopped

1/2 medium red pepper, chopped

Vinaigrette:

6 tablespoons white wine vinegar
4 tablespoons honey
2 tablespoon fresh marjoram, minced or 1 teaspoon dried marjoram (no marjoram? you can use oregano!)
3 teaspoons fresh basil, minced or 1/2 teaspoon dried basil -or- parsley
4 teaspoon Dijon mustard
1-1/2 teaspoons  salt
1/4 teaspoon pepper
1 cup salad oil

Cook pasta according to package directions; drain and rinse in cold water.

In a large bowl, combine the pasta, vegetables, and olives.

In a small bowl, combine the vinegar, honey, marjoram, basil, mustard, salt and pepper. Gradually whisk in oil. Pour over pasta mixture and toss to coat.

Cover and refrigerate until serving.
