Cheeseburger Chowder

Here it is, June already, and I’m still making soup.  I think Summer passed us by, as it is still raining, cold, and windy here in Oregon.  I’d much rather be focusing on watermelon, lemonade and barbecue chicken!

Anyways.

Cheeseburger Chowder:

1 pound hamburger
2 cups potatoes, peeled and cubed
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup chopped green pepper
2 beef bouillon cubes, dissolved in 2 cups hot water
1 tsp. salt
2-1/2 cups milk
3 T. flour
1 cup shredded cheddar cheese
1/4 tsp. black pepper

In a saucepan, brown your hamburger; drain.

Cheeseburger Chowder

Stir in potatoes, celery, onion, green pepper, boullion dissolved in water, salt and pepper. Cover and cook on medium low until vegetables are tender; about 20 to 25 minutes.

Cheeseburger Chowder

Blend 1/2 cup milk with the 3 tablespoons of flour.

Cheeseburger Chowder

Add to saucepan, along with the rest of the milk.

Cook and stir until thickened and bubbly.

Add cheese, and stir until melted.

Garnish with additional cheese and serve.
