I make these cookies every christmas, and have had a few requests over the holidays this year. If you like rice krispy treats and sugar cookies all rolled into one, this one is for you!
1 cup sugar
1 cup brown sugar, firmly packed
1/2 cup margarine, butter, or butter crisco (I am a crisco fan)
1/3 cup shortening (why? I don’t know, I always go for another 1/3 cup of butter crisco)
1 tsp. vanilla
2-1/4 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 cups crisp rice cereal (like rice krispies!)
Heat oven to 375 degrees fareneheit. Lightly grease cookie sheets.
In large bowl, beat sugar, brown sugar, butter, and shortening until light and fluffy.
Add vanilla and eggs, blending well.
Stir in flour, baking powder, baking soda and salt; mix well.
Stir in cereal.
Drop by rounded teaspoonfuls about 2 inches apart onto your greased cookie sheets.
Bake for 8 to 12 minutes until golden brown. Cool for one minute; remove from cookie sheets and cool completely.
Makes about 5 dozen. (Not that you will ever know, because as soon as they come out of the oven, they start disappearing!)
