Smoked Ham

Rub for the ham:
1-1/2 cups brown sugar
1 T. pasilla chili powder
1 T. arbol chili powder
1 T. cumin
1 T. black pepper
1/2 T. celery seed
1/2 T. granulated garlic
1/2 T. onion powder
1 T. oregano
2 T. sea salt
Mix together in a small bowl.

WATER BATH FOR SMOKER

1 tsp. black pepper
2 cloves garlic, minced
1/4 chopped onion
1/2 T. sea salt
1/2 T. cumin
1/2 T. oregano
Water to fill water bath container

We  soak our ham for about an hour in cold water to get rid of some of the saltiness. I know, I know, ham is supposed to be salty! Having been on a lower sodium diet for several years, that much salt  makes my tongue want to fall off. So, it’s completely optional…to soak or not to soak. That’s up to you.

Score ham; generously rub the rub spices all over it. Let it sit for 15 minutes to absorb those delicious flavors, then do it again. Don’t forget the bottom!

Add the spices and water to your water bath, and set in smoker.

Put your ham on your  smoker rack, and set in smoker. Add apple chips in the chip box.  Set smoker to 225 degrees farenheit. Smoke until ham reaches internal temperature of 170 degrees farenheit. Remove from smoker, let rest for about 10 minutes, carve and serve. Delicious delicious ham!

Of course you’re going to slice your ham up real pretty, not like these huge chunks. We smoked this ham for the purpose of making pulled pork er.. ham sandwiches, so it didn’t need to be all gussied up and ready for prom night. Just look at all that carmelized yumminess on there. Makes me want to lick my computer screen.

    I haven’t heard of pasilla chili powder or arbol chili powder before. Do I find it at specialty store or the super market. Can I substitute some other chili powder for it? I want to smoke my Christmas ham like this.

      You can find pasilla and arbol chili powder in the “ethnic” aisle of your local supermarket. (Although if haven’t been able to find it at Walmart.)
      I don’t see why you couldn’t substitute the old generic chili powder everyone has in their cupboards tho.
